Not only is Fall one of Tom’s favorite seasons in New York, but Fall produce also happens to offer a powerhouse of vitamins and nutrients for your eyes.
People commonly ask us, “Can vegetables really help your eyes?” While eating tons of carrots will not give you Superman powers, these veggies will protect your eyes from macular degeneration and cataracts by adding much-needed antioxidants and vitamins to your diet. Also, buying produce that’s in season will save you quite a bit of money. So pick up these seasonal vegetables the next time you take a trip to the grocery store or farmer’s market.
Carrots
We won’t judge if you eat them in carrot cake. Carrots are carrots. They pack a punch of beta carotene and will ward off macular degeneration and cataracts. But if you really want the full health effect, add them to a kale (another fall food) salad and exchange your mid-day chips for baby carrots.
Broccoli & Brussels Sprouts
These Fall staples are full of Vitamin C and much better for you than orange juice because they don’t contain a considerable amount of sugar. Vitamin C is the number one nutrient that will protect you from cataracts.
We know brussels sprouts aren’t necessarily on the top of everyone’s favorite veggies list, but try roasting them in the oven with some garlic salt and olive oil. Nice, easy, delicious. And, if you’ve ever tried broccoli in a stir fry, you know how easy it is to make it delicious. Even the kids will love it!
Sweet Potatoes
What is Fall without sweet potatoes? Not only is their color quintessentially Fall, but sweet potatoes are orange because of gorgeous beta carotene (same as carrots!).
